Pepper Chicken



Pepper Chicken



Ingredients                

Chicken                             500gms

Onion                                        1 chopped

Tomato                              1 chopped

Pepper                               1tbsp

Cloves                               5

Cinnamon                           small piece

Ginger                               1 piece

Garlic                                7-8 flakes

Red Chilly                           5

Coriander seeds                 1tsp

Turmeric powder                 ½ tsp

Oil

Salt to taste               


Method

Grind pepper, ginger, garlic, red chili, coriander seeds and half the onions to a fine paste.

Mix salt with masala. Marinade the masala with chicken pieces for half an hour. Cook until done. Heat oil in a pan and add the remaining onions, cinnamon and cloves. Fry for a couple of minutes and add cooked chicken to it and fry for few minutes.

Ingredients

Chicken                     500gms

  
Chili powder                2tsps

Red food color            2pinch

Corn flour                   1tsp

Ginger-garlic               2tsp

Lemon juice               1 ½ tsp

All purpose flour          1tsp

Egg                           1

Oil for frying

Method

Marinade chicken pieces with all the above ingredients and fry in oil until done.

Chilli Chicken

Ingredients

Boneless chicken pieces        500gms
Tomato sauce                     1tbsp
Chilli sauce                         1tbsp
Soya sauce                        1tbsp
Vinegar                              ½ tbsp
Refined oil                          1tbsp
Ajinomoto                          1/4tsp
Green Chilies’                      3
Mustard powder                  1/2tsp
Pepper and salt to taste

Method

Marinade chicken pieces with mustard powder, vinegar and Ajinomoto.

Eat refined oil and add the marinaded chicken pieces and cook for few minutes.

Add tomato sauce, chili sauce, soya sauce, salt and pepper powder. Cook on low flame until done. Temper with slit green chilies.

Chicken Soup

Chicken pieces                    110gms
Water                                1 litre
Onion                                        finely chopped
Green chillies                      2 finely chopped
Capsicum                           1 finely chopped
Garlic paste                        1tsp
Egg whit whisked                 one
Vinegar                              1tbsp
Corn flour                           1tbsb
Sugar, salt & pepper            to taste

Method

Cook chicken will all above ingredients except corn flour
In a bowl, take some chicken stock and mix corn flour and add it into the soup and cook for two minutes.

Kashmiri Mutton

Ingredients

Mutton                               500gms
Curd                                  1 cup
Red Chillies                         3
Corrriander seeds                2tsps
Onion, ginger and garlic paste 2tbsps
Cardamom                                 4
Cloves                               3
Cinnamon                           1 piece
Corrriander leaves
Oil    
Salt                                   to taste


Method

Crush cardamom, cloves, cinnamon, red chillies and coriander seeds

Heat oil in a pan and fry onion, ginger and garlic paste till it turns golden colour.

Add crushed masala powder and fry for few minutes

Add mutton and cook until done. 

Garnish with sprigs of coriander leaves.
